Clean 3-Minute Breakfast | Chocolate Coconut Chia Pudding

Hello my bunkerities! I'm excited to share one of my favorite superfood recipes with you!

If you're like me than you wake up in a rush with no thought of taking time to have breakfast. It's a bad habit that I have yet to overcome and change. I've always struggled with being a morning person :\

This yummy, clean, gluten-free and dairy-free pudding is perfect for breakfast or even a yummy after-dinner treat. The fact is, you can have it whenever you want and know that it's filled with nutrients that makes your body feel really good. And one of the great things about it is that you can make it, put in the fridge and take it out to eat whenever you want. I make mine before bed to have for breakfast the next day.

Chia seeds are a superfood! They contain:
and vitamins B1, B2, & B3

If you think about it, that is a ton of nutrients packed in these little seeds! I love it!
The more nutrients I can pack in what I eat the better, I say!

It's recommended to have 1,100 milligrams of omega 3's a day for women (1,400 milligrams for preggos) and 1,600 milligrams for men per day. So if you do the math there are 5 grams of omega 3's for every 28 grams (2 tablespoons) of chia seeds. 5 grams are 5,000 milligrams. So 1-2 tablespoons of chia seeds will give you more than enough of the recommended amount of omega 3's you need a day. Pretty cool.

Chia seeds help also help with digestion (because it takes a while for the body to digest), acne, joints, bones and countless other things.


1 1/2 tbsp chia seeds (I buy my black chia seeds from the bins at my local health food store)
1/2 tbsp cocoa powder
1/2 tbsp unsweetened coconut
2 Truvia packets or 4 drops of liquid stevia (you can also use honey instead)
1/2 cup of almond milk (or any type of milk you prefer)
1/2 tbsp of vanilla
More unsweetened coconut and fresh berries for garnish (optional but recommended :)

(The chia seeds, cocoa powder and unsweetened coconut I buy from the bins at my local health food store. That way I can buy exactly how much I want.)

1. Mix together chia seeds, shredded coconut, cocoa powder and stevia

2. Add almond milk and stir

3. Cover with a lid or plastic wrap and stick in your fridge.

*note* the cocoa powder is going to have a hard time mixing well with the other ingredients when you first stir. After it's been refrigerated and the chia gels then the cocoa powder with mix with all of the ingredients.

4. Wait at least 30 minutes before eating. The longer it's left in the fridge the more gelatinous/tapioca-like it will become. Sprinkle unsweetened coconut and fresh berries and enjoy your cute little taste-buds off!
